Breakfast is one of my favorite meals, but I'm pretty simple when I make it... we eat a lot of the same things, like eggs and veggies! However, there are times I want to splurge, and go a little crazy! Since I eat super clean and don't do a lot of crazy splurging, I still like to find easy and fun recipes that are made with good ingredients.
When I happened upon this recipe from the Beachbody Blog, I knew that it was one that I wanted to try. However, it's a slow cooker recipe, and honestly I am an instant type of girl... I like things to be fast & easy, which is why this last Christmas I invested in an Instant Pot. The Instant Pot has become a new favorite appliance in my household!! Even though I'm still learning how to use it, I adore it.
So I worked on adjusting the recipe to fit in my instant pot. It was a total success!!

Banana Bread Oatmeal In Instant Pot
2 cups unsweetened vanilla almond milk
4 cups water
2 cups whole grain oats (I use coaches oats)
3 mashed bananas
2 tablespoons of unsweetened coconut flakes
1 tablespoon of cinnamon
1/2 tsp salt
1 tsp ground nutmeg
Add all into instant pot and stir. Then set manual to 4 minutes. Let naturally release and stir.
Add in chopped nuts and some maple syrup to top.
So extremely yummy. Tell me how you like it!
